- Gather your ingredients. To make fish biryani, you will need fish fillets, basmati rice, onions, garlic, ginger, tomatoes, spices (such as cumin, coriander, turmeric, and chili), ghee or oil, and water.
- Cook the rice. Rinse the basmati rice until the water runs clear, then transfer it to a pot with enough water to cover. Bring it to a boil, then reduce the heat to low and simmer until the rice is cooked through. Once the rice is done, drain off any excess water and set it aside.
- Fry the fish. In a separate pan, heat some ghee or oil over medium-high heat. Once the oil is hot, add the fish fillets and fry until they are cooked through and lightly golden on both sides. Remove the fish from the pan and set it aside.
- Sauté the onions, garlic, and ginger. In the same pan you used to fry the fish, heat some more ghee or oil over medium heat. Add the onions, garlic, and ginger and sauté until the onions are softened and lightly golden.
- Assemble the biryani. In a large, deep pot, layer the cooked rice, sautéed onions and spices, and fried fish. Drizzle the top with some ghee or oil, then cover the pot with a lid and cook over low heat until the flavors have melded together and the biryani is heated through. Serve the biryani hot with some raita or yogurt on the side.
