How to make Mutton Biryani in 10 steps

  1. First, gather your ingredients: mutton, basmati rice, onions, garlic, ginger, tomatoes, yogurt, spices (cumin, coriander, turmeric, red chili powder, garam masala), ghee or oil, and saffron or food coloring (optional).
  2. In a large pot, heat ghee or oil over medium-high heat. Add the onions and fry until they are golden brown.
  3. Add the garlic and ginger and fry for another minute. Then, add the mutton and fry until it is browned on all sides.
  4. Add the tomatoes and cook until they are soft and the mutton is cooked through. Stir in the yogurt, spices, and a cup of water.
  5. Reduce the heat to low and add the rice, stirring to combine. Cover the pot and let the biryani cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. If desired, add saffron or food coloring to the biryani for a beautiful golden color. Serve hot with a side of raita or chutney.
